The recipes are so pedagogically well designed that even fairly inexperienced home cooks can achieve great things. Dim sum roughly means 'to touch the heart' and Karin Lei does exactly that. I find it hard to imagine a more complete and flavorful cookbook than this one on dim sum in all its variations. You can also read about dim sum culture, ingredients, techniques and tips for cooking at home. Traditionally, dim sum is served by sharing and tasting many different dishes, but most can be eaten on their own or with rice or noodles. In addition, they can often be prepared and frozen and then cooked when the time comes.
