Clare Smyth is the first and only British female chef to hold three Michelin stars in the UK. Before that, she was Chef Patron at Restaurant Gordon Ramsay, and Ramsay himself has written the introduction to this book. Core opened in Notting Hill in 2017 and received its third star in 2021, just over three years after opening, which is unusually quick.
The book contains 60 of the restaurant's signature dishes, as well as 70 recipes for fundamentals such as stocks, sauces and breads. That balance is worth noting, as three Michelin starred restaurant books generally consist of dishes that nobody outside a professional kitchen is ever going to make. Here, more than half the content is something you can actually use.
Smyth's approach is to elevate the humble rather than import the expensive, something most clearly demonstrated by her potato dish with roe, a dish built around potatoes that somehow ends up being the one you remember afterwards. She grew up on a farm in Northern Ireland, and it shows in her approach to ingredients.
