Colatura di Alici is the gold of Cetara, a small village outside Naples. A delicious preparation that comes from a centuries-old tradition. The anchovies caught during the spring on the Amalfi Coast, by Cetara's fishing boats, are processed a few hours after being caught. The anchovies are cleaned and then placed in a chestnut barrel, interspersed with layers of sea salt. The maturity period varies from 18 to 30 months.
Colatura di Alici has a shelf life of 24 months from the moment of bottling. Anchovy sauce can be used to replace salt to enrich all your pasta, vegetable, legume or fish dishes. The taste is pure umami and can boost any dish.
