About Carrageenan Iota (E407a)
Carrageenan Iota is a stabilizing agent that can be used to make elastic jellies or glazes - great for mousses and toppings on cakes and pastries. It reacts with calcium, making it suitable as a stabilizer in recipes with dairy products.
Use
Dose 0.2% - 2% by weight. Add to the liquid and heat it while stirring to at least 70 degrees. The gel forms as the mixture cools. pH solubility - 4.5-10.
