About Calcium sulphate (E516)
Calcium sulphate is a naturally occurring salt - just like the common table salt sodium chloride. However, the applications of the salts are different. Use calcium sulphate to improve texture; as a stabilizer or to regulate the acidity of products. It is a good source of calcium and can be added to tofu to improve stability. If used in bread, it prevents sticky and soft doughs.
Use
As needed - it is easy to dissolve.
