    • The key to success for the Bradley Smoker is the flavoured smoking briquettes. To make the briquettes, hardwood chips of the exact amount have been pressed together and bound together with controlled pressure to the right density. The taste of the smoke depends on the type of wood used in the smoking briquette. Alder and maple provide a rich and distinctive flavour that is commonly used with seafood, ham and bacon. Here in Sweden, al is the traditionally used type of wood and can be used for most things in Swedes' taste. Hickory and mesquite have stronger and very distinct flavors and are commonly used to smoke beef and pork such as roast pork (pork bow) and beef brisket. Apple and cherry give a sweeter, milder smoke flavour and are usually used for poultry and game. See the flavor guide tab for more information on wood types and flavours. The Bradley smoke burns a smoke briquette every twenty minutes and produces a pure smoke flavour. After each briquette has finished burning, it is gently pushed down from the element by the next briquette and falls down and is extinguished in a bowl of water. This cycle continues as long as the smoke generator is loaded with briquettes. When wood burns, the smoke is produced during the first few minutes. Once the wood generates enough heat and burns, there are high temperatures, acids, resins and gases that distort the taste and appearance of smoked food. When wood burns, there is no control over cooking conditions. With Bradley smoking briquettes, the guess work is taken away. Bradley smoking briquettes not only remove unwanted heat, the smoke produced the Bradley way is four times cleaner than the smoke produced by identical smoke chips burned in a frying pan or smoke box. The Bradley Smoker consumes briquettes at a rate of one every 20 minutes. Composition Bradley's smoking briquettes are made from natural hardwood without additives. Tests conducted by the British Columbia Institute of Technology have shown that Bradley smoking briquettes produce more than four times cleaner smoke than smoke produced by identical smoke chips burned in a frying pan or smoke box. 99.98% natural deciduous trees or fruit trees 0.02% collagen - a natural substance used as a binding agent Origin The EU Timber Regulation obliges companies trading in timber to exercise due diligence if they trade in wood-based products within the EU. The regulations are intended to prevent illegal logging. All smoking briquettes are subject to this process of "due diligence" carried out by the European distributor in cooperation with the manufacturer. Organic status Some customers have asked if Bradley's smoking briquettes are organic. The question has been forwarded to the "Soil Association", which decides such questions. We have been assured that the briquettes meet the requirements, although we do not have a formal certificate.
