A good bread knife shows in the result immediately. A knife that cuts is not the same as a knife that presses and tears through bread, and the difference is most apparent against a sourdough with a hard crust and open crumb. The BK22 is Veark's bread knife with serrated edge, 22 cm, forged in a single piece of German steel in Solingen.
22 cm handles most large-format loaves in a single sweep and avoids the half-broken cut that occurs when the knife is shorter than the bread is wide. The edge cuts through crust without requiring pressure, protecting the crumb structure and giving a clean cut with a flat surface rather than a crushed edge. In design terms the BK22 has a wooden handle unlike the rest of Veark's knives, but visually belongs just as naturally next to them on a magnetic bar. Those who build a Veark wall collection and leave out the bread knife have an obvious gap.
Blade length 22 cm. Stainless steel X50CRMoV15, 58 HRC. Made in Solingen, Germany.
