Massimo Bottura started Refettorio Ambrosiano during the Milan Expo in 2015, getting the world's finest chefs to cook meals from what would otherwise have been thrown away. The book collects those dishes, meaning food made from leftover and often scorned ingredients, and it's the first to take a comprehensive approach to food waste. Bottura's own words are that you have to fight waste before you can feed the planet. The recipes can be made by anyone, anywhere, on any budget, which in this context is the entire point and not an accessibility compromise. So despite its title, this isn't a book about baking.
