      This is a high quality natural bicarbonate that, when in contact with acid, works well as a leavening agent in baking, for example. Bicarbonate can replace baking powder if there is an acidic ingredient in the recipe. One part bicarbonate is equivalent to two parts baking powder. Bicarbonate is alkaline and can be used to increase the pH. It's worth remembering that some other molecular ingredients work best within certain pH ranges.

      What's also worth pointing out is that the Maillard reaction - the complex chemical process that occurs when the surface of food turns golden brown during cooking - happens faster with basic ingredients. You can therefore use bicarbonate to speed up this process. This can be useful if, for example, you have decided that you must make a French onion soup, but only have about an hour to do so. Another tip is to have bicarbonate in the cooking water, 3 grams per liter, also speeds up the cooking time and maintains the chlorophyll of the vegetables - it makes your vegetables greener, simply put.
