    • About Agar Agar (E406) Our powdered Agar Agar is an ultra-fine powder that has many uses. It is a vegan-friendly gelling and thickening agent. It creates neutral jellies even in low concentrations. Agar Agar is a thickener that is extracted from red algae and is often used as a vegetarian alternative to gelatin. The gel-forming substance in agar agar is ten times stronger than in gelatin, which means that 2 to 10 grams of Agar Agar per kilogram of liquid is enough to create jelly. In water at 90 - 100ºC it dissolves and settles at 40 - 45ºC. It can be reheated to 85ºC again, without melting. The gel formation in the powder is dependent on the acid content of the ingredients - the higher the acid content, the more Agar Agar is needed. Usage: Allow the powder to soak in any liquid for 5 to 10 minutes before gently boiling, stirring constantly, until all the powder has dissolved. The mixture settles when cooled down to about 40 degrees. - Can be used in siphons to create light and heat-resistant mousses and foams. - In creams to create a more durable texture. - As a thickener in liquids or sauces. - When making jam as an alternative to pectin as a thickener. Content: Agar agar (E406). Store dry, cool and dark. Opened packaging lasts for six months. Should not be eaten in its pure form.
