Sharpening steels & stones
Sharpening steels and stones are used daily to correct the edge of the knives. Going over the knives with a steel is therefore not about sharpening them, but about straightening them. When a knife is used, the edge becomes slightly bent; if you straighten it continuously, the knife stays sharp longer. If you don't straighten it, the knife will need to be sharpened more often. Make it a routine to use a sharpener before and after using a knife and notice how much longer it stays sharp.
