Unlike mature wines that need protecting from air, young red wines actively need oxygenation to open up and release their aromas. The Evolution carafe is designed to make that process easier: the base is built to stand in two positions, upright or at an angle. In the angled position it is easy to swirl the wine around inside the carafe, which stirs up the molecules and accelerates the development of the aromas. The wide base further increases the wine's contact surface with the air.
