Every chef has a notebook, and every chef's notebook has survived at least one serious water incident. The demi-glace recipe that took three attempts to get right, last Friday's tasting notes and the mise en place list for Saturday's dinner all have a habit of ending up next to the sink, under a pan that's boiling over or in a puddle of something you'd rather not know about.
This one is actually made for hikers and campers who write in rain and snow, but a restaurant kitchen on a Friday night is roughly the same climate. The pages are water-resistant and unlined, and a pencil is included, since ink and water are rarely friends. An elastic band keeps the notebook closed and the pencil in place. The cover is faux leather embossed with an octopus.
The format is A6, so it fits in most apron pockets.
