This variety of pepper grows wild in southern Madagascar on vines that can reach up to 65 feet in height, which means harvesting them is quite the workout. The peppercorns, which tend to be small and sport a distinctive tail, deliver woody, floral and fruity notes without any overwhelming heat.
Pairs particularly well with meat (poultry, pork and lamb), vegetables (potatoes and salads), omelettes and goat's cheese, as well as strawberries, melons and chocolate.
