A tapenade with great and rich umami made from the protein of crickets rather than larger livestock. Insects are already a natural part of the diet in most of the world, but have a weak tradition in Scandinavia. Danish company Syngja has addressed this and produces a lovely tapenade made from home-grown crickets which not only tastes great but has a fantastic sustainability calculation behind it. According to their fancy pdf, it can take 35 times as much water to produce 1 kilo of cow compared to producing 1 kilo of cricket. If you compare pigs to crickets, the figure is 15 times as much water and 10 times as much for chickens. In addition to the fact that the water consumption is so much lower, the nutritional values are also high enough to convince anyone who is still skeptical. The protein value of crickets is as high as 65%, which means that a bruschetta with tapenade on crickets matched with a glass of mature Barbaresco is a perfect post-workout snack (interpretation made by a person without a gym card). The vitamin B content is also very high and we have read that it is healthy. In summary, we can say that benefits on paper do not make food enjoyable, we at KitchenLab know this very well.
