A 16 cm knife may be the most underrated size in the knife block. It's long enough to slice a pork tenderloin or chicken breast in a single stroke, yet short and nimble enough to trim off sinew and portion a rib-eye.
This one comes from Zwilling's Pro series and is forged from a single piece of Zwilling's own steel alloy, ice-hardened using the Friodur method. The blade has a plain edge with Zwilling's V-Edge sharpening. The curved bolster, designed by Matteo Thun and Antonio Rodriguez, gives the knife good balance and a steady grip close to the blade.
Blade length 16 cm, hardness 55–58 HRC, overall length 28.6 cm, weight 160 g. Classic black plastic handle with three rivets. Hand wash. Made in Germany.
