All three knives are crafted from 33 layers of Damascus steel, with a hard VG10 steel core and 16 layers on each side. The dimples along the blade prevent fatty, oily or starchy ingredients from sticking, which is especially helpful when slicing things like zucchini or thin potato slices that otherwise cling as if their life depended on it.
