Sumac is a versatile spice that adds a nice acidity to your food. It has long been common around the Mediterranean and the Middle East, where it is used in marinades, rubs and sauces or to top slightly bland dishes to bring them to life.
Sumac is one of the few spices that has a distinct acidity and is often used like vinegar, lemon or tamarind. It is also an important component of the spice blend za’atar.
Sumak grows as small berries in dense clusters and is harvested when it has a deep color. They are then dried and crushed into a coarse powder similar in color to Burgundian Pinot Noir. This sumac is organic and mixed with 3% salt to evenly crush the berries and increase shelf life.
