The 18/8 stainless steel handles extremely high oven temperatures, and the matching griddle turns the tray into a resting rack, a draining station for fried food, or a roasting setup where hot air actually circulates under your ingredients. Both tray and griddle are oven safe and dishwasher safe - and come out of the dishwasher looking like themselves, wash after wash. Not microwave safe. The mesh on the grid is 17 mm.
One honest note: at very high heat the tray may flex slightly the very first time you use it. It straightens out as it cools, and after that first outing the problem never returns. Consider it broken in.
