Round tartlets are lovely, but sometimes you want dessert to look like it had an architect. This square tin measures 100 x 100 mm and gives sharp corners that look great on a platter. The edge is fluted and the base fixed, so the tin is easy to line with pastry and easy to empty.
The coating is a two-layer, PFAS-free non-stick that Gobel describes as one of the thickest around, so the pastry releases without greasing. The tin handles 250°C and is sold individually. Made in France by Gobel, who have been making bakeware since 1887.
