The first springform pan you buy is usually thin, a bit wonky and only just about watertight. It does its job for a few years, until the base starts to warp and the rim leaks butter all over the oven. This one is for anyone who has reached that realisation.
Heirol's Pro pan is made of 1 mm thick steel, which makes it sturdy and less prone to warping, and heat spreads evenly through the batter. The surface has a silicone-based non-stick coating and the base is removable, so the cake comes out without you having to resort to a knife. The pan is just as good for sponge cakes and cake layers as for cheesecakes. Grease and dust the pan with flour or breadcrumbs before baking, and let the cake cool before opening it. Don't store food in the pan, as acids in food can damage the coating. Oven safe up to 240 °C. Wash by hand.
Available in three sizes: 20 cm holding 2 litres, 24 cm holding 2.8 litres and 26 cm holding 3.1 litres.
