For risottos, sauces and soupsMill & Mortar works with a small Spanish supplier of organic Karl Johan mushrooms that are picked locally, meaning Karl Otto is only available in limited quantities.KARL OTTO is a spice blend that is perfect for risottos - hence the name. It is best used to flavor risotto, sauces and soups. Karl Otto consists of dried Karl Johan mushrooms, garlic, parsley and a little cornflower. A delight to the eye and palate. Use about 2 tablespoons of seasoning per 100g of risotto rice. 1 tablespoon (about 10 g) corresponds to about 100 grams of fresh Karl-Johan mushrooms.
