      Sous vide means ""under vacuum"" and has been a restaurant staple around the world for ages. By first vacuum-sealing meat, fish, chicken or whatever you fancy, then submerging it in perfectly temperature-controlled water, you can achieve stunning results. Set your Sous Vide to the desired temperature, clip it onto a pot or pan, start the timer and let it do its thing. Because the temperature stays rock steady, there's zero risk of drying out your ingredients. It stays accurate to within /- 0.1°C thanks to the water circulation.

      What is a sous vide circulator?

      A sous vide circulator is a precise, temperature-controlled heating element that keeps a water bath at a constant temperature. Heat transfers more efficiently in water than in air, which means that food placed in an airtight plastic bag is cooked gently and with total control. The circulator monitors the water and maintains the exact temperature you want your food to reach. Follow the instructions and your food will never be under- or overcooked. Since the water never gets hotter than your set temperature, the food inside never will either. So if it sits in there a little longer than planned, no big deal.

      With the temperature precision that circulators offer, you can easily decide whether you want your meat rare, medium, well-done or anywhere in between.
