Small fluted tartlet tins are the foundation of everything from Scandinavian almond tarts to French petits fours and savoury bites. This one measures 80 mm across and is sold individually, so you buy exactly as many as your tray holds, or as many as your patience allows.
The tin has a fixed base and a two-layer, PFAS-free non-stick coating that Gobel describes as one of the thickest around, which means the dough releases without butter and without swearing. The material is 0.5 mm thick and the tin handles 250°C. Made in France by Gobel, who have been making bakeware since 1887.
