The American company Microplane sets the standard when it comes to premium graters. By many chefs and pastry chefs around the world, it is seen as the obvious choice. We at KitchenLab use ours every time something needs to be grated, zested or sliced. With an iron from Microplane, you can grate most things and the blades stay sharp for a very long time. The graters consist of small razor-sharp edges that are etched, rather than punched as traditional graters are.
The fact that etched blades work so well in the kitchen was discovered by a Canadian woman in 1994, when she was baking orange pie. Frustrated by the poor performance of her grater, she snatched her husband's rasp from Microplane, a construction brand at the time. As you can imagine, they quickly changed tack and are now a beloved tool in kitchens around the world.
