Satake Shāpu is a patented manual knife sharpener for optimal results. It sharpens/polishes Japanese edges at 15°-18° and European edges at 20°-23°. Satake Shāpu features spring-loaded, rotatable diamond/ceramic sharpening and
honing rods that adapt to the knife edge SAF* for optimal sharpening and honing/polishing.

Diamond-coated sharpening rods for reshaping the edge of dull knives, and ceramic honing rods that maintain, hone and polish the edge to an optimally sharp finish.
First, note which sharpening angle your knife has. Japanese angle is 15° and European style is 20°. Place the Satake Shāpu on a stable, flat surface. If your knife is very dull, start with the diamond side of the rods to reshape and sharpen the edge.
Note that the diamond side should only be used when sharpness can no longer be achieved through honing/polishing with the ceramic rods. For continuous maintenance of sharpness, only the ceramic rods should be used. Fine sharpening/polishing with the ceramic rods is recommended as daily maintenance.
SHARPENING
Add water to the blade. The grinding residue mixes with the water and is easily rinsed off after sharpening.
OPTIMAL SHARPENING MOTION
Pull the knife Forward - Backward - Downward - Upward. Repeat the entire motion pattern several times until the optimal result is achieved.
