With Karimatto comes a simple and affordable series of knives that do the job without flashing too much. The steel is a combination of molybdenum and vanadium called 5Cr15Mov with an HRC of 56. The handles are comfortable to hold and made from a durable composite material.
Santoku is a traditional Japanese-style chef's knife. The olive grind allows you to avoid the vacuum that causes potato slices to stubbornly stick to the blade.
A Chinese cleaver of this model is thicker and heavier than other knives to easily get through a cabbage head, for example. Because of its weight, only your local physiotherapist will get the gig if you use it to chop onions. For an all-purpose knife, look no further than a gyuto or santoku.
