Santoku means “three virtues” and refers to meat, fish and vegetables. The shorter version of the shape is not a compromise in capability, but a choice that suits kitchens with limited space and hands that prefer a knife that stays close and controlled.
The Senzo Retro Santoku 143 mm is made by Suncraft in Seki, Japan, a family-owned manufacturer established in 1948. The blade has a three-layer construction with a Ginsan core, a semi-stainless steel with characteristics close to carbon steel: a thinner bevel, better edge retention and a steel that can take a genuinely keen edge. Corrosion resistance is better than carbon steel but it should still be stored dry. Hardness: 59–61 HRC.
The nashiji finish gives the blade a textured, matte surface that reduces friction and draws its aesthetic from classic Japanese knife design. The handle is made from wenge in an octagonal shape. Hard, weighty and dry in the hand.
