Wet sea salts like fleur de sel and Guérande salt are harvested by hand and retain their natural moisture and minerals, making them more flavourful and complex than refined dry salt. That same moisture content, however, makes them impossible to grind in a standard salt mill: the crystals clump together and clog mechanisms not built for the job.
Peugeot's new Zirlion mechanism in zirconium oxide ceramic features across the entire new salt mill range and is harder than steel and impervious to corrosion. But the Oléron for wet salt goes a step further: the mechanism has three blades that break up the moist crystals along with a spiral blade that continuously stirs the contents of the reservoir, keeping the salt in motion. It is that combination which ensures the mill grinds evenly and without interruption even with very wet or clumpy salt.
