    • Rotaval Micro is an advanced kitchen instrument that uses low temperature distillation of solids together with a vacuum pump to obtain pure aromas and essences from both liquids and solid products as long as they contain moisture. It has been developed in collaboration with the Alicia Foundation Food and Science and is based on the principle of the rotary evaporator used in chemical laboratories, which makes it possible to extract and concentrate flavours while preserving nuance and purity. Rotaval Micro captures the finest aromas and the essence of ingredients, opening up possibilities to create flavourful extracts, impregnate products with subtle notes or separate clean alcohols from drinks for further use in the kitchen’s recipes.

      The unit has a maximum rotation speed of up to 200 revolutions per minute and a bath with temperature control from ambient temperature up to 99 °C, which makes it suitable for a wide range of applications including reductions and cooking with reflux. The height can be adjusted with an electric motor and the vacuum level goes down to -0.8 bar, giving control over the process and efficiently allowing water to be removed under vacuum while aromas are preserved. The machine is supplied complete with evaporation flask, condenser and receiving flask, as well as vacuum pump, temperature probe and electronic rotation speed control with display, which makes it easier to set and monitor the processes.

      Rotaval Micro is a tool for modern kitchens where flavour development and extraction are central, and for experimental cooking where new textures and aroma profiles are desired. It makes it possible to work with reductions and distillates without oxidising delicate components, which preserves clean flavours and allows ingredients to be used in ways that are not possible with traditional methods. Rotaval Micro has a robust construction with external dimensions of approximately 69 cm by 46 cm by 70 cm and a weight of about 32 kg, providing stability and quality for regular use in professional environments.

      Rotaval Micro truly shines when you want to highlight pure aromas that are otherwise lost in traditional cooking. It allows you to separate and use alcohol free distillates from wines, spirits or liqueurs while preserving their aroma, which suits both dessert applications and modern drinks programmes. You can also work with infusions where the base product absorbs flavour without changing colour or texture, opening up subtle and precise flavour layers in dishes. Rotaval Micro makes it possible to give fish and shellfish nuances of seaweed infusions, to refine cream bases with clean herbal tones or to create completely unique scent notes from ingredients that normally do not tolerate high heat. For creative desserts you can work with distillates of caramel, chocolate, coffee or roasted grains where the depth of flavour becomes extraordinarily pure. The machine invites you to build your own aroma libraries that can be used for spraying, glazing, impregnation or as hidden flavour carriers in a dish where the guest senses the result but cannot guess how you achieved it. This means you can use the machine to produce your own essences or flavour drops from fruit grown in your own garden. Have fun.
