Round tartlets are lovely, but sometimes you want dessert to look like it had an architect. This rectangular tin measures 121 x 75 mm and is made for long tartlets with fruit in neat rows. The edge is fluted and the base fixed, so the tin is easy to line with pastry and easy to empty.
The coating is a two-layer, PFAS-free non-stick that Gobel describes as one of the thickest around, so the pastry releases without greasing. The tin handles 250°C and is sold individually. Made in France by Gobel, who have been making bakeware since 1887.
