Ravioli Tablet is Marcato's answer to the question of what happens if you take the same idea and build it properly. It weighs almost two kilos, stays put on the worktop on its rubber feet and makes ten large square ravioli of 5 x 5 cm at a time, with a precision that makes it look as if you've been doing this all your life.
The plate consists of two parts. At the bottom is an anodised aluminium base with ten moulds, and on top of it a removable, transparent plastic cutting plate that makes the actual cut. Flour the cutting plate, lay a sheet of pasta over it and press the dough into the moulds, fill them and lay a second sheet on top. Then roll the included aluminium rolling pin over everything. The middle section of the pin spins freely around its axle, so you just press on the handles and let it roll, and the cutting plate cuts through the dough and seals each raviolo along the edges. Lift off the cutting plate and turn the ravioli out onto the worktop.
Because the moulds are deep and the dough is laid over them, you get ravioli with a generous pasta lid and plenty of room for filling. It works just as well for classic ricotta and spinach as for sweet versions, or for pastelitos and other filled dough parcels to be fried or baked. And since everything happens on a stable, flat surface, there's less mess and less dough drying out while you work.
The silver aluminium base has a clean, modern shape that matches Marcato's pasta machines, and it feels more like a tool than a gadget.
The plate comes from Marcato in Campodarsego near Padua, which has been making pasta machines and kitchen tools since 1930.
