Making ravioli is a bit like ironing shirts: it takes about as long to get everything out as it does to actually do the job. So you might as well make lots at once. This tray makes 36 classic square ravioli of 3.5 x 3.5 cm in each batch, which means fewer rounds and more ravioli in the freezer.
The tray is made of cast aluminium with sharp edges around each hollow. Lay a sheet of pasta over the tray, gently press the dough into the holes, fill them and lay a second sheet on top. Then roll the wooden rolling pin over the tray, and the edges cut through the dough and seal the layers around each raviolo in a single stroke. Turn the tray over and out they fall, square and identical.
The size is the classic one, just right for a mouthful and easy to fill, and with 36 per batch, two or three rounds are enough for a dinner with friends. Ravioli also freeze brilliantly if you lay them out on a tray and freeze them individually before they go into a bag, so what you make on a Sunday can be dinner on a Tuesday.
The tray comes from Marcato in Campodarsego near Padua, which has been making pasta machines and kitchen tools since 1930.
