Round ravioli have something extra about them. Maybe it's the shape, which makes them look a little more lovingly made, or maybe it's just that they look like little flying saucers that have landed in browned butter. With this tray you make 24 at a time, all 4 cm in diameter and all exactly the same size.
The tray is made of cast aluminium with round hollows and sharp edges. Lay a sheet of pasta over the tray, gently press the dough into the holes, fill them and cover with a second sheet. Then roll the wooden rolling pin over the tray, and the edges cut through the dough and seal the layers around each raviolo in the same motion. Turn the tray over and out they fall.
The size is a nice middle ground. They're big enough to hold a generous dollop of filling and small enough for a few to fit on a fork along with the sauce. Try ricotta and lemon with brown butter and sage, or pumpkin and parmesan, and you'll see why there's no need to make it more complicated than that.
The tray comes from Marcato in Campodarsego near Padua, which has been making pasta machines and kitchen tools since 1930.
