This is the largest of Marcato's square ravioli trays, and it makes 24 ravioli of 5 x 5 cm in each batch. These are proper ravioli, the kind you serve as a main course rather than a little starter that disappears in three bites, and 24 are enough for dinner for four or five.
The tray is made of cast aluminium with sharp edges around each hollow. Lay a sheet of pasta over the tray, gently press the dough into the holes, fill them and lay a second sheet on top. Then roll the included wooden rolling pin over the whole lot, and the edges cut through the dough and seal the layers around each raviolo at the same time. When you turn the tray over they fall out, square and identical, so nobody at the table needs to check who got the biggest.
The size gives plenty of room for filling, and it shows. Here, ricotta with lemon, creamy potato with truffle or a rich beef ragù all fit without any need to skimp. The tray is also a good way to make a lot at once and freeze, since ravioli freeze brilliantly if they're laid out separately first.
The tray comes from Marcato in Campodarsego near Padua, which has been making pasta machines and kitchen tools since 1930.
Makes 24 square ravioli, approx. 50 x 50 mm. Cast aluminium tray, solid wood rolling pin. Clean with a brush or cloth, not dishwasher safe. Made in Italy.
