Small things made with great care have something special about them. This ravioli stamp is only 3.8 cm in diameter, but it's built as if it were an instrument. The solid walnut handle is dark and vividly grained, treated with natural wax and shaped to rest softly between thumb and fingers. The stamp beneath is made of brass with a champagne-coloured finish, warm and muted at the same time, and it looks just as good lying on the worktop as at work.
In the middle of the smooth ring is an anodised aluminium disc resting on a spring. When you press the stamp down over two pasta sheets with a small dollop of filling in between, the disc meets the dough first, pushes out the air and gathers the filling in the middle, and then the smooth brass edge cuts through and seals with a clean, round cut. Lift, and the spring pushes out a small, perfectly round raviolo. It's quick, and after ten you'll have stopped counting.
The size is for elegant little ravioli. They work in a clear broth, as a starter with brown butter and parmesan, or as a small surprise next to something else on the plate. The smooth edge gives a clean, modern look, and the stamp works just as well for small biscuits and shortcrust.
The stamp is part of Marcato's Heritage range, where dark walnut and brass meet in kitchen tools inspired by the 20th-century Italian kitchen. It's a tool that makes pasta night feel a little more special and one you're happy to see left out afterwards. Marcato has been making kitchen tools in Campodarsego near Padua since 1930.
