30 DAYS OPEN PURCHASEAsk someone to draw a raviolo and it will most likely look like this: a little square cushion, about the size of a postage stamp but considerably nicer to lick. This tray makes 24 of them at 3.5 x 3.5 cm at a time, the size most people picture when they think of ravioli.
The tray is made of cast aluminium and has sharp edges around each hollow. Lay a sheet of pasta over the tray, gently press the dough into the holes, fill them and cover with a second sheet. Then roll the wooden rolling pin over the tray, and the edges cut through the dough and seal the layers around each raviolo at the same time, so the filling stays put when they're boiled. Turn the tray over and out they fall.
It's a manageable, easy-to-work size for everyday ravioli. It's forgiving if you haven't done this many times before, and the tray is compact enough to fit in an ordinary kitchen drawer. Ricotta and spinach, minced veal or mushrooms all work well, and with a simple tomato sauce or a little butter and parmesan, dinner is ready.
The tray comes from Marcato in Campodarsego near Padua, which has been making pasta machines and kitchen tools since 1930.
