There is no doubt that the world's best siphons come from the Austrian manufacturer iSi. They set the standard for what you can create with a siphon, and you'll have to look hard to find a chef worthy of the name who would consider using another. It's a solid stainless steel construction made for professional use. The siphon is charged with gas cartridges that create pressure in the container.
This is one of our absolute favorite kitchen tools. It gives you a freedom that opens up completely new ways of approaching flavors and textures. The question you might ask is closer to "what can't you do?" than the opposite - we use it for everything. From carbonated fruits and perfectly whipped cream to fluffy purees and an airy sponge cake that goes in a minute in the microwave. Quickly infuse with your siphon
A relatively new way to use your Gourmet Whip is to quickly infuse flavors. It's something that cocktail genius Dave Arnold came up with a few years back. You pour in a liquid, add whatever you want to flavor it with and then pressurize it with 2O. This forces everything to be squeezed together, deep into the pores. When you release the pressure, the liquid pulls in a lot of flavor from the other ingredients.
While not everyone may believe in dilltequila as strongly as you do - this one allows you to quickly and easily explore any flavor combination you can imagine. Unlike other methods of infusing flavors, it's quick (usually less than 5 minutes) and because it's so fast, you can easily correct and improve. You also preserve the fresh flavor of fresh ingredients, rather than infusions that sit for days.
