About Profi Whip from iSi It's no secret that the world's best siphons come from the Austrian manufacturer iSi. They set the standard for what you can create with a siphon, and you'll be looking for a long time before you find a chef worthy of the name who would consider using another. It is a solid stainless steel construction made for professional use. The siphon is loaded with gas cartridges that create a pressure in the container. This is one of our absolute favourite tools in the kitchen. It gives you a freedom that opens up completely new ways of tackling flavours and textures. The question you can ask is closer to 'what can't you do?' than the opposite - we use it for all sorts of things. From carbonated fruits and perfectly whipped cream to fluffy purees and an airy sugar cookie that goes in the microwave for a minute. You can also store your filled siphon in the fridge for several days without the contents going bad. This siphon can handle cold sauces, emulsions and spreads. Do not use it for hot. Quickly infuse with your siphon. A relatively new way to use your Gourmet Whip is to be able to quickly infuse flavours. It's something that cocktail genius Dave Arnold came up with a few years back. You pour in a liquid, add whatever you want to flavour it with and then you pressurise it with N2O. Then everything is forced to squeeze together, deep into the pores. Then, when you release the pressure, the liquid draws a lot of flavour from the other ingredients. While maybe not everyone believes in dill tequila as strongly as you do, this one gives you the ability to quickly and easily explore any flavour combination you can think of. Unlike other methods of infusing flavours, it's quick (usually less than 5 minutes) and because it's so quick, you can easily correct and improve. You also preserve the fresh taste of fresh ingredients, rather than infusions that sit for days. Among other things, you get a tulip-shaped mouthpiece, pipe cleaner and ergonomic cartridge holder.
