A potato ricer gives a different result from a standard masher: when cooked potato is pressed through the sieve in thin strands, the cells are broken mechanically without being worked, which keeps the starch content down and gives a lighter texture. That is the difference visible in a smooth, fluffy purée compared to a gluey or sticky one.
