It is the size you reach for when lifting a small fish fillet, placing a quenelle or spreading a narrow stripe of sauce along the rim of the plate. Narrow enough for precision, long enough to carry the component all the way. The blade's slight flex and the straight, long handle give control without the hand blocking the work. Loop at the end for easy hanging. Dishwasher safe.
The palette was designed by Anne-Sophie Pic, whose restaurant Pic in Valence has held three Michelin stars since 2007, a year in which she also went down in history as the first French woman to do so in fifty years. The restaurant is family-inherited in three generations and is known as much for precise plating as for deep, layered flavours. The series was developed in collaboration with André Verdier, whose factory in Thiers has carried craft traditions since 1856, and the design studio C+B Lefebvre. Also available in the sizes Micro (8 cm), Medium (9 x 5 cm) and Longue (16 cm).
