A palette in hardened stainless steel, forged from a single piece with an eight-centimetre blade. It is a precision tool for plating: lifting, moving and placing individual components on the plate with millimetre-level control. Microgreens, decorations, delicate garnishes that cannot tolerate a finger. The blade's slight flex and the straight, long handle make it possible to work close without the hand getting in the way. There is a loop at the end so it can be hung up. Dishwasher safe.
The palette was designed by Anne-Sophie Pic. In 2007 she brought the family restaurant Pic in Valence back to three Michelin stars, and in doing so became the first French woman to hold that distinction in fifty years. Her grandfather André founded the restaurant, her father Jacques brought it to three-star level, and Anne-Sophie carried it forward. That the tools she designed, in collaboration with the cutlery firm André Verdier and the design studio C+B Lefebvre, reflect the precision demands of her kitchen is no coincidence. Made in Thiers, France's cutlery centre since the nineteenth century. Also available in the sizes Mini (11 cm), Medium (9 x 5 cm) and Longue (16 cm).
