A palette in hardened stainless steel, forged from a single piece with a sixteen-centimetre blade. It is the size for components that require reach and lifting power: a whole fish fillet of normal size, a longer piece of meat to be glazed in one sweep, or a broad stroke of sauce across a large plate. The blade's slight flex means it bends with the ingredient rather than against it. Straight handle with a loop at the end for easy hanging. Dishwasher safe.
The palette was designed by Anne-Sophie Pic, third-generation chef in the Pic family and since 2007 holder of three Michelin stars at the restaurant in Valence, a year in which she also became the first French woman to do so in fifty years. The series was developed in collaboration with the cutlery firm André Verdier, active in Thiers since 1856, and the design studio C+B Lefebvre, with the aim of giving professional kitchens tools that actually meet the standard. Also available in the sizes Micro (8 cm), Mini (11 cm) and Medium (9 x 5 cm).
