Timut belongs to the same botanical genus as Sichuan pepper and shares its light numbing sensation on the tongue, but the flavour profile is something else entirely: fresh, tangy and intensely citrus-aromatic with a pronounced grapefruit character that catches most people off guard the first time they encounter it.
