White pepper from Madagascar, from Peugeot's Premium Selection. White pepper is quite literally the core of the peppercorn's core: the berries are picked fully ripe and cherry-red, soaked in fresh water and then carefully hand-peeled until every last bit of outer flesh is gone. It's a more labour-intensive process than black pepper, and the result is a pepper with a fresh, floral character and hints of menthol that is softer and less earthily sharp than its black counterpart.
Perfect with white meat, poultry, white fish and vegetables like pumpkin, asparagus, haricots verts and mixed salads. Also works wonderfully in desserts with orange or pear.
