Most pepper salts taste mostly of salt. This one tastes of pepper, which is the point. The Pham family on Phu Quoc combine their black pepper with roasted sand-grown garlic and Vietnamese sea salt, and the result is a salt that does more than a regular table salt.
Phu Quoc pepper has a softness and fruitiness that many black peppers lack. The roasted garlic adds umami and roundness, and the salt binds it all together. It is a salt to cook with and to sprinkle over finished dishes.
Add to pasta cooking water. Rub into a thickly sliced bread with olive oil. Sprinkle on poached eggs. Use as a finishing touch on grilled fish or thinly sliced meat. The companion product Phu Quoc Chili Salt, from the same farm but with roasted chili instead of pepper, is worth having alongside if you want heat.
