It's the ripeness that makes red pepper rarer and pricier than black: the berries must stay on the vine longer, which demands more labour and greater precision at harvest. The result is a fruity and smooth pepper with citrus undertones and an unusually long and gentle finish that sets it apart from sharper varieties.
Pairs well with white and red meat, oily fish, tomatoes and peppers, pulses, and sweet-and-sour dishes. Also works unexpectedly well in desserts with cherry, quince or citrus, and as a companion to dark chocolate.
