Red Kampot from the same farm is harvested at full ripeness and belongs to an entirely different category: sweet heat, orange blossom and honeyed fruit. Both are protected by a geographical indication, one of the very few spices in the world with such protection. Late Harvest Phu Quoc from the Pham family on Phu Quoc island in Vietnam is the softest and most rounded of the three: a finishing pepper with a slowly climbing, white-pepper warmth.
