Black Kampot pepper from Kampot Province in southern Cambodia, one of the world's most celebrated peppers with a terroir shaped by proximity to the sea and the protective mountain landscape to the north. The climate and soil give Kampot pepper a sweet, fruity base note with a hint of cool menthol that sets it apart from sharper, earthier varieties. Black Kampot pepper is harvested while the berries are still green and then dried, unlike the red variety which stays on the vine until fully ripe.
Pairs well with red meat, oily fish such as tuna and mackerel, red cabbage, tomatoes, lentils and chickpeas, as well as strawberries, cherries and dark chocolate.
