The secret behind flaky pastry, light scones and shortcrust that melts in your mouth is cold butter in small pieces. The trouble is that hands are warm, and the longer you rub the butter in with your fingers, the more it melts. This pastry blender solves that. Five curved stainless steel blades cut the cold butter straight into the flour without you touching the dough with your hands, until the mixture looks like coarse crumbs with little bits of butter left. Just as it should.
It's an old-fashioned tool that has been in American and British kitchens for generations and turns out to be unbeatable for its purpose. Use it for pie crust, shortcrust, scones, biscuits, crumble and streusel, or for mashing avocado, boiled eggs and potatoes when it doesn't need to be completely smooth.
The handle is made of beech and sits firmly in the hand, and the blades are sturdy enough to get through even really cold butter. Wash it by hand and don't leave the wood to soak.
